Thinking of the Bayou

Like many other Americans, I have been thinking about the Gulf Coast a lot lately. I'm really worried about everyone down there. Kevin and I are praying for them! In honor of New Orleans (and the Gulf Coast), I decided to make a Po' Boy Sandwich for dinner.

Since I didn't have any tartar sauce I made some using this recipe. That's really the only thing I *made.* I spread the tartar sauce on a small french baguette and then piled the fish, tomatoes, and spinach. It was pretty tasty!

I always make my own tartar sauce. I don't care for sweet tartar sauce so I use real mayo & dill pickles too.
When we have a fish fry with our friends who have the ponds, the man always uses Miracle Whip and sweet relish and I bring my own. It's a joke between us.....so I'm so happy to see your recipe. It's the best.
